Marinate the chicken: Mix the chicken pieces with yogurt, grated ginger, garlic, paprika powder, garam masala, turmeric, cumin, and salt. Let marinate for at least 30 minutes (or overnight in the refrigerator for even more flavor).
Sear the chicken: Heat a frying pan and sear the chicken pieces in a little butter or oil until they get color. They don't need to be cooked through. Set aside.
Make the sauce: Melt the butter in a pot, add the onion and sauté gently until soft. Pour in the crushed tomatoes, chicken stock, sugar, salt, and spices. Let simmer for about 10 minutes.
